I’ve been really into sandwiches for the last few days, and for good reason. What’s not to love about a sandwich? They’re usually delicious and satisfying, and they are wonderfully versatile. Almost any human will agree, a good sandwich is a beautiful thing.
In this post, I offer you a couple of recipes to take your sandwich to the next level. So go ahead, and turn your pretty good sandwich into a damn good sandwich.
Aleppo Mayo
- 1 cup mayo
- juice from half a lemon
- 1 1/2 tsp aleppo pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp cayenne (optional)
Place one cup of mayo into a plastic container. Add the lemon juice, aleppo pepper, and garlic powder. Mix well, cover, and leave in the fridge for at least an hour.
Sesame Teriyaki Tofu
- 1 14 oz package of extra firm tofu, drained and cut into slices
- 2 tbsp olive oil
- 1 tbsp toasted sesame oil
- 1 tbsp rice vinegar
- juice from half a lemon
- 1/4 cup teriyaki sauce
- 1/2 tsp cayenne pepper (optional)
- ~1 tbsp sesame seeds
Combine marinade ingredients and pour over tofu. Allow to marinate in the fridge for at least an hour.
Preheat oven to 375 degrees F. Place tofu on a baking sheet, sprinkle with sesame seeds, and bake for about 15 minutes. Flip the tofu, sprinkle with sesame seeds and drizzle any leftover marinade, and bake for another 7-10 minutes.
I must say, this tofu is really damn good. SO much more delicious than Tofurky, and less processed, and about half the price.
Now you’re all set to make a really good sandwich. This one is aleppo mayo, teriyaki sesame tofu, lettuce, cucumbers, muenster cheese, and PEA SHOOTS on a fine whole grain bread.
Pea shoots are fantastic and a wonderful addition to any sandwich, and can be purchased at Trader Joe’s.
