I’ve been wanting to try my hand at a quiche for a while. Turns out they’re a lot easier and less intimidating than they look. In fact, mine turned out to be incredibly cute, and was almost no work at all to prepare. This recipe serves two.
Spinach and Chickpea Quiche
- 4 eggs
- 1 tbsp soy milk
- 2 oz shredded mozzarella cheese
- 2 oz chickpeas
- 1/2-3/4 cup spinach, coarsely chopped
- a few chopped mushrooms, optional
- 1/8 tsp salt
- 1/8 tsp cayenne pepper
- 1/2 tsp black pepper
Preheat oven to 375 degrees F. Beat the eggs in a small casserole dish, add soy milk, salt, cayenne, and black pepper. Stir in cheese, spinach, chickpeas, and mushrooms, if using. Bake for 40-45 minutes. We just kind of devoured ours, but I think it’d be great served with whole grain toast and some green beans.
