I had a request recently for low acid recipes. I don’t really know much about the subject, and there’s a lot of conflicting information about which foods are low acid. So, this is my disclaimer. I’m not a health professional.
However, according to my (online) research, all of the ingredients in this recipe are low acid or alkaline. If nothing else, it’s a really good, really healthy recipe.
Dal is a dish that Greg and I enjoy frequently. However, we usually serve it with rice or naan, so it’s a pretty heavy meal. I like this rendition of the recipe because it includes some vegetables that lighten the meal, and even allow it to stand alone if you’d prefer not to eat it with rice.
Green Lentil Dal with Cauliflower and Green Beans
- 5 cups water
- 1 cup green lentils (which actually look quite brown), rinsed
- 1 cup frozen french green beans
- 2 cups cauliflower florets
- 2 serrano peppers
- 1 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp ginger
Boil the water and add the lentils. Cook for 5 minutes uncovered. Then cover, reduce heat to medium-low, and cook for an additional 15 minutes. Add spices, salt, serrano peppers, cauliflower, and green beans. Cook on low for another 15 minutes, stirring occasionally. If the pan is drying out, add a little more water.
