Healthy Pumpkin Muffins

These healthy muffins are moist, flavorful and definitely breakfast worthy.

Healthy Pumpkin Muffins

  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp allspice
  • 1/2 cup sucanat
  • 1/3 cup agave nectar
  • 1 cup pumpkin
  • 3 tbsp plain yogurt (dairy or soy)
  • 1/2 cup almond milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup chia seeds
  • 1/2 cup coconut
  • 3/4 cup raisins or dates (optional)

Preheat oven to 400 degrees F. Combine the flours, baking powder, salt, and spices in a bowl. Combine the pumpkin, sucanat, agave nectar, yogurt, oil, almond milk, and vanilla extract in a separate. Add the wet ingredients to the dry ingredients and fold in the chia seeds, coconut, and raisins and/or dates. Spray a muffin tin with cooking spray and fill each cup about 3/4 full. Bake for 17 minutes.
