I picked up some culinary lavender at work yesterday. These cookies are delicious, and I think the lavender flavor makes them just right for enjoying with tea.
Lavender Shortbread Cookies
- 3 sticks of butter
- 1 cup sugar
- 1 tsp double strength vanilla
- 3 cups flour
- 1/4 tsp salt
- 1 1/2 tsp culinary lavender
Preheat oven to 350 degrees F. In a large bowl, combine the butter, sugar, vanilla, and salt. Mix until smooth. Add flour gradually. Fold in lavender. At this point, you can either roll the dough out and cut the cookies into pretty shapes, or you can do what I did and just make spheres of dough. Unfortunately I was in a hurry. Bake for 18-21 minutes, until slightly brown around the edges.
You can’t really see all the lovely flecks of purple in this photo, but these really are lovely, elegant cookies. Tea party, anyone?
Greg and I are off to Chicago today to see Belle and Sebastian! I’m so excited. I thought this day would never come. We’re also meeting up with my aunt and uncle for Indian food, so I should have some more food adventures to share when I return this evening.
