This ridiculously easy soup is the perfect companion for a warm toasty sandwich on a cold day. Don’t be fooled by its simple appearance. This is some awesome soup.
Butternut Squash Soup
- 1 1/2 pounds butternut squash, cut into small pieces
- 1 medium onion, chopped
- 6 cups vegetable broth
- 2 tsp sweet curry powder
- 1 tsp nutmeg
- 1 tsp cayenne pepper (optional)
- salt and pepper to taste
Bring vegetable broth to a boil in a medium saucepan. Add onion, squash, nutmeg, cayenne, and curry powder, and cook over medium heat until the squash is soft. Immersion blend (or cool and blend in a regular blender) until smooth. Garnish with nutmeg and black pepper.
