I was exhausted when I woke up for work yesterday, so breakfast was just this bowl of blackberries.
I also ate an apple when I got to work.
I’m trying to get away from snacking in between meals (slowly but surely), because I’ve found that eating is actually more fun when you’re really hungry. So yesterday, I brought big romaine salad with some tomatoes to snack on.
It was perfect, because the large volume of food kept my stomach from growling, but I was still super hungry when lunchtime rolled around. Eventually, I don’t want to have any snacks between meals, but it’s more difficult at work since I don’t normally eat lunch until after 2.
Lunch was spaghetti squash with chickpeas and tomato sauce. This is a new favorite of mine! My sincerest apologies for the sloppy presentation. It was just thrown into my lunchbox.
So good, so satisfying to eat, so much fiber.
At dinner, I began reincorporating soy into my diet with a tofu vegetable stir fry.
