Apricot Walnut Apple Cookies

Here’s a recipe for a  healthy cookie that makes an awesome snack or breakfast component. Adapted from Applesauce Softies in Vegan Cookies Invade Your Cookie Jar.

Apricot Walnut Apple Cookies

  • 1/2 cup spelt flour
  • 1/2 cup oat flour
  • 3/4 cup all purpose flour
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 3/4 cup sucanat
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/3 cups unsweetened applesauce
  • 1/3 cup chopped walnuts
  • 1/3 cup chopped apricots

Reduce the applesauce in a small saucepan over low heat for about 20 minutes, until the volume is reduced to about 2/3 cup. Completely cool the applesauce before continuing.

Preheat oven to 350 degrees F. In a medium bowl, combine the flours, cornstarch, baking soda, salt, and spices. In a separate bowl, combine the sucanat, vegetable oil, vanilla, and reduced applesauce. Combine the wet and dry ingredients. Stir in chopped apricots and walnuts. Place tablespoon sized cookie dough onto a greased cookie sheet. Bake for 10-12 minutes.

    Hi there – do you think coconut and brown rice flour can be used to replace the spelt, oat and all purpose flours? This recipe looks great!

      I haven’t tried those in this recipe, but I don’t see why not! If you do, you might want to use a bit of xanthan gum, since gluten free baked goods tend to fall apart without it. Let me know how it goes if you try it!

    And that’s a compliment, btw. These look amazing. Can’t wait to try them this weekend, when I don’t have to rush off to work with coffee in a plastic cup and Life cereal in a plastic baggie. Ugh.

      Nope, I just threw it together with things I had in my pantry. It will work fine with just all purpose flour, and if you buy the walnuts and apricots in the bulk section, you can just buy the amount you need for the recipe. Thanks for reading!

      I was vegan for about 5 years, so I do a lot of baking without eggs. I actually think baking with eggs is a hassle, and I’m no good at cracking them.

    I love anything that has to do with apples and the thought of apple cookies sounds so delicious! I am definitely going to try these.
