Here’s a recipe for a healthy cookie that makes an awesome snack or breakfast component. Adapted from Applesauce Softies in Vegan Cookies Invade Your Cookie Jar.
Apricot Walnut Apple Cookies
- 1/2 cup spelt flour
- 1/2 cup oat flour
- 3/4 cup all purpose flour
- 1 tbsp cornstarch
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 3/4 cup sucanat
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 1/3 cups unsweetened applesauce
- 1/3 cup chopped walnuts
- 1/3 cup chopped apricots
Reduce the applesauce in a small saucepan over low heat for about 20 minutes, until the volume is reduced to about 2/3 cup. Completely cool the applesauce before continuing.
Preheat oven to 350 degrees F. In a medium bowl, combine the flours, cornstarch, baking soda, salt, and spices. In a separate bowl, combine the sucanat, vegetable oil, vanilla, and reduced applesauce. Combine the wet and dry ingredients. Stir in chopped apricots and walnuts. Place tablespoon sized cookie dough onto a greased cookie sheet. Bake for 10-12 minutes.
I want this and I want this now. I am so going to have to make this…and…I am so going to have to run an extra 5 miles!! 🙂
I’ll join you for those extra 5 miles! Thanks for reading 🙂
Thanks a lot.

Hi there – do you think coconut and brown rice flour can be used to replace the spelt, oat and all purpose flours? This recipe looks great!
I haven’t tried those in this recipe, but I don’t see why not! If you do, you might want to use a bit of xanthan gum, since gluten free baked goods tend to fall apart without it. Let me know how it goes if you try it!
I am about to personally petition WordPress: They must not choose cookies and other yummy recipes for Freshly Pressed status. It is TOO early, and I am TOO hungry!
😉
And that’s a compliment, btw. These look amazing. Can’t wait to try them this weekend, when I don’t have to rush off to work with coffee in a plastic cup and Life cereal in a plastic baggie. Ugh.
I hope you enjoy them! Thanks for reading!
Oh yum! But posts like this don’t help my desire to lose weight! They increase my desire to enjoy some tasty yumminess!!! Thanks for sharing!
They’re pretty healthy, as far as baked goods are concerned!
Def. looked like what we “yema” here in the Philippines 🙂
Lovely.
Apricot!! What a wonderful idea- I have tried walnut but never apricot… the recipe looks easy enough for me to attempt as well…lol!
It’s very easy!
GORGEOUS PHOTO! Grabbed me right off of the sign on screen and I usually ignore those! What is sucanat?
Sucanat, or evaporated cane juice, is just unrefined sugar.
Here’s the wikipedia entry:

Oh thanks! Can’t wait to try this declicious recipe. I just love anything with apricots. However… Although I translated American cookbooks some time ago, I can’t remember the non-metric measurements now. Hopefully, this converter
will help me and other Europeans and the rest of the world? (No, I’m not related to *bitsy* whoever they may be.)
Looks yummy

Does this work now?
This looks amazing. I am always looking for something yummy yet nutritious to fit into my diet plan. Have you calculated the nutritional values for these??
These cookies are definitely the best of both worlds! I have not done any calculations for any of my recipes yet.

You have come to the right place. I’m trying to make all of my baking a whole lot healthier, so stay tuned 🙂

There is nothing better in this world than apricots. And cats. In fact, I have a cat that loves apricots.
The world is at peace.
Looking forward to reading more of your blog.

Apricots and cats make this blog go ’round. Thanks so much!
Apricots and walnuts are two of my dad’s FAVORITE things and to have them both in one cookie — brilliant! I’m totally making these cookies for him. Thank you so much!

Thank you so much for reading!
I like the photo of the chopped material. It always helps the inexperienced to see what the steps of a process should look like, and you have done a good job of it here.
Thank you!
These look amazing, plus i love apple-sauce in lieu of butter!
They will be made!
thanks, grats on being FP,

Greetings
Thanks for reading! Look forward to hearing from you again!
These look delicious!
Are they complicated to make?
Thank you! No, they’re very simple. The hardest part is waiting for the applesauce to reduce 🙂
Looks good. I’m recently out of college as well, and I’m trying to learn to bake a few things.
Wonderful! How great is it to be able to whip up a batch of delicious cookies that are so healthy you could eat them for breakfast?
looks very delicious… will this cost a lot?
Nope, I just threw it together with things I had in my pantry. It will work fine with just all purpose flour, and if you buy the walnuts and apricots in the bulk section, you can just buy the amount you need for the recipe. Thanks for reading!
Yes!
I’d love to try these!
How many cookies does the recipe make?
I would guess 1-2 dozen, depending on the size of the cookies and how much of the dough you eat 🙂
I ended up with about 16.
looks very delicious, I love ah!I try it.now:)
GREAT looking cookies, awesome macro photo! I better make these! 🙂
I hope you like them! Thanks for reading!
I’m headed to the store now. 😛

I have an egg alergy, so I rarely get to have cookies. I’m looking forward to this recipe!

I was vegan for about 5 years, so I do a lot of baking without eggs. I actually think baking with eggs is a hassle, and I’m no good at cracking them.
I hope you love the cookies!
What is “spelt flour” and what is “sucanat”?????

:3 I am going to try and make these cookies!
Those look scrumptious! I’m guessing a pretty good fiber count in those babies?
I haven’t done any calculations, but I would guess so, at least compared to other cookies!
I must try this. I can’t really bake, but I’ll try this recipe.
Today i did manage to bottle wine though! lol. I bottled a gwertzraminer AND.. something that would go well with these cookies.. apricot, mango PORT. yum
